Ingredients
- 9 oz (250g) Cooked chicken breast
- 1 Large egg
- 1/2 cup (50g) Parmesan, finely grated
- 1 tsp Italian seasoning
- 1/4 cup (60g) Low-sugar marinara
- 1 cup (113g) Mozzarella, shredded
- 12 Pepperoni slices
- to taste Salt and black pepper
Method
- Preheat oven to 400°F (200°C). Line a baking sheet with parchment.
- Pulse cooked chicken in a food processor until very fine.
- Mix with egg, parmesan, Italian seasoning, salt, and pepper.
- Spread into a 10-inch round on the parchment. Bake 15 minutes until firm and golden.
- Top with marinara, mozzarella, and pepperoni. Bake 8-10 more minutes until bubbly.
- Let rest 2 minutes before slicing.
