Ingredients

  • 9 oz (250g) Cooked chicken breast
  • 1 Large egg
  • 1/2 cup (50g) Parmesan, finely grated
  • 1 tsp Italian seasoning
  • 1/4 cup (60g) Low-sugar marinara
  • 1 cup (113g) Mozzarella, shredded
  • 12 Pepperoni slices
  • to taste Salt and black pepper

Method

  1. Preheat oven to 400°F (200°C). Line a baking sheet with parchment.
  2. Pulse cooked chicken in a food processor until very fine.
  3. Mix with egg, parmesan, Italian seasoning, salt, and pepper.
  4. Spread into a 10-inch round on the parchment. Bake 15 minutes until firm and golden.
  5. Top with marinara, mozzarella, and pepperoni. Bake 8-10 more minutes until bubbly.
  6. Let rest 2 minutes before slicing.
