Ingredients

  • 4 medium Zucchini
  • 8 oz (225g) Italian sausage, crumbled
  • 1/2 cup Sugar-free marinara
  • 1 cup Mozzarella, shredded
  • 2 tbsp Parmesan, grated
  • 1 tsp Italian seasoning

Method

  1. Halve zucchini lengthwise. Scoop out centers to make boats.
  2. Brown sausage, drain. Mix with marinara.
  3. Fill zucchini boats with sausage mixture.
  4. Top with mozzarella and parmesan.
  5. Bake at 400°F 18-20 minutes until zucchini is tender and cheese is golden.
