Ingredients
- 4 medium Zucchini
- 8 oz (225g) Italian sausage, crumbled
- 1/2 cup Sugar-free marinara
- 1 cup Mozzarella, shredded
- 2 tbsp Parmesan, grated
- 1 tsp Italian seasoning
Method
- Halve zucchini lengthwise. Scoop out centers to make boats.
- Brown sausage, drain. Mix with marinara.
- Fill zucchini boats with sausage mixture.
- Top with mozzarella and parmesan.
- Bake at 400°F 18-20 minutes until zucchini is tender and cheese is golden.
