Ingredients

  • 1 lb (450g) Ground chicken (93/7)
  • 1 cup packed (150g) Zucchini, grated and squeezed dry
  • 1/2 cup (56g) Shredded mozzarella
  • 1 Large egg
  • 1/3 cup (75g) Whipped cream cheese
  • 1 cup (30g) Arugula
  • 6 (40g) Fresh dark sweet cherries, pitted and halved
  • 1 tbsp Olive oil
  • to taste Salt and pepper

Method

  1. Combine chicken, squeezed zucchini, mozzarella, egg, salt, and pepper. Mix until just uniform.
  2. Shape into 4 wide, flat patties about 1/2 inch thick — these are your top and bottom buns.
  3. Heat olive oil in a non-stick skillet over medium. Cook patties 5-6 minutes per side until cooked through (165°F internal).
  4. Spread cream cheese on 2 patties (the bottoms). Top with arugula and cherry halves.
  5. Cap with the remaining 2 patties. Slice in half if needed and serve warm.
