Ingredients
- 1 lb (450g) Ground chicken (93/7)
- 1 cup packed (150g) Zucchini, grated and squeezed dry
- 1/2 cup (56g) Shredded mozzarella
- 1 Large egg
- 1/3 cup (75g) Whipped cream cheese
- 1 cup (30g) Arugula
- 6 (40g) Fresh dark sweet cherries, pitted and halved
- 1 tbsp Olive oil
- to taste Salt and pepper
Method
- Combine chicken, squeezed zucchini, mozzarella, egg, salt, and pepper. Mix until just uniform.
- Shape into 4 wide, flat patties about 1/2 inch thick — these are your top and bottom buns.
- Heat olive oil in a non-stick skillet over medium. Cook patties 5-6 minutes per side until cooked through (165°F internal).
- Spread cream cheese on 2 patties (the bottoms). Top with arugula and cherry halves.
- Cap with the remaining 2 patties. Slice in half if needed and serve warm.
