Ingredients

  • 8 pieces Chicken thighs, bone-in skin-on
  • 3 tbsp Lemon juice
  • 1 tbsp Lemon zest
  • 3 tbsp Olive oil
  • 1 tbsp Dried oregano
  • 4 Garlic cloves, minced
  • to taste Salt and pepper

Method

  1. Preheat oven to 425°F (220°C).
  2. Mix lemon juice, zest, olive oil, oregano, garlic, salt and pepper.
  3. Coat chicken thighs with the marinade.
  4. Place skin-side up on a baking sheet. Roast 30-35 minutes until skin is crispy.
  5. Let rest 5 minutes. Serve with pan juices spooned over top.
