Ingredients
- 8 pieces Chicken thighs, bone-in skin-on
- 3 tbsp Lemon juice
- 1 tbsp Lemon zest
- 3 tbsp Olive oil
- 1 tbsp Dried oregano
- 4 Garlic cloves, minced
- to taste Salt and pepper
Method
- Preheat oven to 425°F (220°C).
- Mix lemon juice, zest, olive oil, oregano, garlic, salt and pepper.
- Coat chicken thighs with the marinade.
- Place skin-side up on a baking sheet. Roast 30-35 minutes until skin is crispy.
- Let rest 5 minutes. Serve with pan juices spooned over top.
