Ingredients

  • 8 oz (225g) Halloumi cheese, sliced
  • 1 large Cucumber, diced
  • 1 cup Cherry tomatoes, halved
  • 1/4 cup Kalamata olives
  • 1/4 Red onion, thinly sliced
  • 3 tbsp Olive oil
  • 1 tbsp Red wine vinegar
  • 1 tsp Dried oregano
  • to taste Salt and pepper

Method

  1. Grill or pan-fry halloumi slices 2 minutes per side until golden.
  2. Combine cucumber, tomatoes, olives, and red onion.
  3. Whisk olive oil, vinegar, and oregano for dressing.
  4. Toss salad with dressing. Top with grilled halloumi.
