Ingredients

  • 3 medium Eggplants, sliced
  • 1 lb (450g) Ground beef
  • 1 medium Onion, diced
  • 3 medium Tomatoes, diced
  • 2 Green pepper, diced
  • 1/4 cup Olive oil
  • 3 cloves Garlic
  • to taste Salt, pepper, cumin, paprika

Method

  1. Salt eggplant slices and let sit 15 minutes. Pat dry.
  2. Fry eggplant in olive oil until golden. Drain on paper towels.
  3. Brown ground beef with onion, garlic, and peppers.
  4. Add tomatoes and spices. Cook 10 minutes.
  5. In a baking dish, layer eggplant and meat sauce.
  6. Bake at 375°F (190°C) for 25-30 minutes.
  7. Rest 10 minutes before serving.
