Ingredients
- 3 medium Eggplants, sliced
- 1 lb (450g) Ground beef
- 1 medium Onion, diced
- 3 medium Tomatoes, diced
- 2 Green pepper, diced
- 1/4 cup Olive oil
- 3 cloves Garlic
- to taste Salt, pepper, cumin, paprika
Method
- Salt eggplant slices and let sit 15 minutes. Pat dry.
- Fry eggplant in olive oil until golden. Drain on paper towels.
- Brown ground beef with onion, garlic, and peppers.
- Add tomatoes and spices. Cook 10 minutes.
- In a baking dish, layer eggplant and meat sauce.
- Bake at 375°F (190°C) for 25-30 minutes.
- Rest 10 minutes before serving.
