Ingredients

  • 100 g swordfish
  • 1 (juiced) lemon
  • 1 tsp thyme
  • 2 tbsp olive oil
  • 50 g salad

Method

  1. Combine olive oil, lemon juice, and thyme in a bowl to create a marinade, then add the swordfish and let it marinate for 12 minutes.
  2. Preheat the grill to medium-high heat while the swordfish absorbs the marinade.
  3. Thread the marinated swordfish onto skewers, ensuring the pieces are evenly spaced for consistent cooking.
  4. Place the skewers on the grill and cook for approximately 33 minutes, turning every 8 minutes and basting with the remaining marinade to build layers of flavor.
  5. Remove the swordfish souvlaki from the grill once the fish is opaque and slightly charred at the edges.
  6. Arrange the salad on a serving platter and lay the grilled swordfish skewers on top, drizzling any remaining lemon and olive oil marinade over the dish before serving.
