Ingredients

  • 200 g squid
  • 80 g Feta cheese
  • 2 medium tomato
  • 1 tbsp parsley
  • 2 tbsp olive oil
  • 3 cloves garlic

Method

  1. Preheat the oven to 180°C (350°F) and lightly grease a baking dish with 1 tablespoon of olive oil.
  2. Clean the squid by removing the innards and pulling the tentacles free, then pat the tubes dry with paper towels.
  3. In a bowl, combine the crumbled Feta cheese, finely chopped tomato, minced garlic, chopped parsley, and the remaining 1 tablespoon of olive oil to form the stuffing.
  4. Carefully spoon the Feta and tomato mixture into each squid tube, filling them to about three-quarters capacity, then secure the open ends with toothpicks.
  5. Arrange the stuffed squid in the prepared baking dish and scatter any remaining stuffing and tomato pieces around them.
  6. Bake in the preheated oven for 25–27 minutes, until the squid is tender and lightly golden on the outside.
  7. Remove the toothpicks, garnish with the remaining chopped parsley, and serve immediately.
