Ingredients
- 200 g squid
- 80 g Feta cheese
- 2 medium tomato
- 1 tbsp parsley
- 2 tbsp olive oil
- 3 cloves garlic
Method
- Preheat the oven to 180°C (350°F) and lightly grease a baking dish with 1 tablespoon of olive oil.
- Clean the squid by removing the innards and pulling the tentacles free, then pat the tubes dry with paper towels.
- In a bowl, combine the crumbled Feta cheese, finely chopped tomato, minced garlic, chopped parsley, and the remaining 1 tablespoon of olive oil to form the stuffing.
- Carefully spoon the Feta and tomato mixture into each squid tube, filling them to about three-quarters capacity, then secure the open ends with toothpicks.
- Arrange the stuffed squid in the prepared baking dish and scatter any remaining stuffing and tomato pieces around them.
- Bake in the preheated oven for 25–27 minutes, until the squid is tender and lightly golden on the outside.
- Remove the toothpicks, garnish with the remaining chopped parsley, and serve immediately.
