Ingredients

  • 1.5 cups (360 g) full-fat Greek yogurt (strained)
  • 1 medium (300 g) English cucumber
  • 2 pieces garlic clove (minced)
  • 2 tbsp extra virgin olive oil
  • 2 tbsp fresh dill (chopped)
  • 1 tbsp lemon juice
  • 0.5 tsp fine sea salt

Method

  1. Grate the cucumber on the large holes of a box grater into a clean kitchen towel.
  2. Wrap the towel around the grated cucumber and squeeze hard over the sink for 30 seconds to remove as much liquid as possible — this step is what keeps the dip thick.
  3. Tip the squeezed cucumber into a medium bowl and add the strained Greek yogurt.
  4. Add the minced garlic, chopped dill, lemon juice, and salt to the bowl.
  5. Pour in the olive oil and stir everything together with a spoon until smooth and uniformly green-flecked.
  6. Cover the bowl and chill for at least 30 minutes so the garlic mellows and the flavours marry.
  7. Stir once more before serving and finish with a final drizzle of olive oil and a pinch of dill on top.
