Ingredients
- 1.5 cups (360 g) full-fat Greek yogurt (strained)
- 1 medium (300 g) English cucumber
- 2 pieces garlic clove (minced)
- 2 tbsp extra virgin olive oil
- 2 tbsp fresh dill (chopped)
- 1 tbsp lemon juice
- 0.5 tsp fine sea salt
Method
- Grate the cucumber on the large holes of a box grater into a clean kitchen towel.
- Wrap the towel around the grated cucumber and squeeze hard over the sink for 30 seconds to remove as much liquid as possible — this step is what keeps the dip thick.
- Tip the squeezed cucumber into a medium bowl and add the strained Greek yogurt.
- Add the minced garlic, chopped dill, lemon juice, and salt to the bowl.
- Pour in the olive oil and stir everything together with a spoon until smooth and uniformly green-flecked.
- Cover the bowl and chill for at least 30 minutes so the garlic mellows and the flavours marry.
- Stir once more before serving and finish with a final drizzle of olive oil and a pinch of dill on top.
