Ingredients
- 4 piece(s) Chicken thigh (boneless)
- 1/2 cup Green and black olives
- 1 cup Cherry tomatoes
- 1 tbsp Capers
- 2 tbsp Olive oil
- 3 clove(s) Garlic, minced
- 1 tsp each Thyme and rosemary
- to taste Salt and pepper
Method
- Preheat oven to 190°C (375°F).
- Marinate chicken with olive oil, garlic, thyme, salt and pepper.
- Arrange chicken in a baking dish, scatter tomatoes, olives and capers in between.
- Bake for 30-35 minutes.
- Garnish with fresh rosemary and serve.
