Ingredients

  • 4 piece(s) Chicken thigh (boneless)
  • 1/2 cup Green and black olives
  • 1 cup Cherry tomatoes
  • 1 tbsp Capers
  • 2 tbsp Olive oil
  • 3 clove(s) Garlic, minced
  • 1 tsp each Thyme and rosemary
  • to taste Salt and pepper

Method

  1. Preheat oven to 190°C (375°F).
  2. Marinate chicken with olive oil, garlic, thyme, salt and pepper.
  3. Arrange chicken in a baking dish, scatter tomatoes, olives and capers in between.
  4. Bake for 30-35 minutes.
  5. Garnish with fresh rosemary and serve.
