Ingredients
- 50 g green lentils (small portion)
- 300 g cubed beef
- 1 small onion
- 2 medium tomato
- 2 pieces pepper
- 1 tbsp mint
Method
- Heat a large pot over medium-high heat and brown the cubed beef for 5 minutes, stirring occasionally until the surface is sealed.
- Add the diced tomato and sliced pepper to the pot and sauté for 3 minutes until the vegetables begin to soften.
- Stir in the green lentils and add enough water to cover the ingredients by about 1 inch, then bring to a simmer.
- Reduce heat to medium-low and simmer for 12 minutes until the lentils are tender and the beef is cooked through.
- Taste and adjust seasoning as needed, then stir in the fresh mint just before serving.
