Ingredients
- 2 piece(s) Duck leg
- 2 tbsp Rock salt
- 4 clove(s) Garlic
- 4 stalk(s) Thyme
- 2 piece(s) Bay leaf/leaves
Method
- Rub duck legs with salt, refrigerate with garlic and herbs for 12 hours.
- Rinse off the salt and pat dry.
- Place in a deep pot and cook in the oven at 130°C (265°F) for 2 hours in its own fat.
- Increase to 220°C (425°F) for the last 10 minutes to crisp the skin.
- Serve with a green salad.
