Ingredients

  • 2 piece(s) Duck leg
  • 2 tbsp Rock salt
  • 4 clove(s) Garlic
  • 4 stalk(s) Thyme
  • 2 piece(s) Bay leaf/leaves

Method

  1. Rub duck legs with salt, refrigerate with garlic and herbs for 12 hours.
  2. Rinse off the salt and pat dry.
  3. Place in a deep pot and cook in the oven at 130°C (265°F) for 2 hours in its own fat.
  4. Increase to 220°C (425°F) for the last 10 minutes to crisp the skin.
  5. Serve with a green salad.
