- 4 slice(s) Ham slices
- 60g Butter
- 1 tbsp Lemon juice
- 2 piece(s) Egg yolk(s) (for sauce)
- to taste Salt and pepper
Method
- Hollandaise sauce: Whisk egg yolks with lemon juice in a double boiler.
- Slowly add melted butter while whisking to emulsify. Season with salt.
- Add vinegar to boiling water and poach the eggs (3 minutes).
- Place ham slices on a plate and top with poached eggs.
- Drizzle with hollandaise sauce and serve.
