  • 4 slice(s) Ham slices
  • 60g Butter
  • 1 tbsp Lemon juice
  • 2 piece(s) Egg yolk(s) (for sauce)
  • to taste Salt and pepper

Method

  1. Hollandaise sauce: Whisk egg yolks with lemon juice in a double boiler.
  2. Slowly add melted butter while whisking to emulsify. Season with salt.
  3. Add vinegar to boiling water and poach the eggs (3 minutes).
  4. Place ham slices on a plate and top with poached eggs.
  5. Drizzle with hollandaise sauce and serve.
