Ingredients
- 8 oz (225g) Halloumi cheese, sliced 1/2-inch thick
- 4 cups Mixed salad greens
- 1/2 English cucumber, sliced
- 1 cup Cherry tomatoes, halved
- 1/4 cup Kalamata olives, pitted
- 3 tbsp Extra virgin olive oil
- 1 tbsp Lemon juice
- 1/2 tsp Dried oregano
- to taste Salt and black pepper
Method
- Pat halloumi slices dry. Heat a dry nonstick skillet over medium-high heat.
- Sear halloumi 2 minutes per side until deeply golden. Remove from heat.
- Whisk olive oil, lemon juice, oregano, salt, and pepper for the dressing.
- Toss greens, cucumber, tomatoes, and olives with half the dressing. Plate and top with seared halloumi. Drizzle the remaining dressing over.
