Ingredients

  • 8 oz (225g) Halloumi cheese, sliced 1/2-inch thick
  • 4 cups Mixed salad greens
  • 1/2 English cucumber, sliced
  • 1 cup Cherry tomatoes, halved
  • 1/4 cup Kalamata olives, pitted
  • 3 tbsp Extra virgin olive oil
  • 1 tbsp Lemon juice
  • 1/2 tsp Dried oregano
  • to taste Salt and black pepper

Method

  1. Pat halloumi slices dry. Heat a dry nonstick skillet over medium-high heat.
  2. Sear halloumi 2 minutes per side until deeply golden. Remove from heat.
  3. Whisk olive oil, lemon juice, oregano, salt, and pepper for the dressing.
  4. Toss greens, cucumber, tomatoes, and olives with half the dressing. Plate and top with seared halloumi. Drizzle the remaining dressing over.
