Ingredients
- 250 g Halloumi cheese
- 150 g Cherry tomatoes
- 1 piece(s) Zucchini
- 2 tbsp Olive oil
- 1 tsp Red pepper flakes
- a handful Basil
Method
- Score halloumi hasselback-style with thin cuts (do not cut all the way through).
- Chop zucchini and tomatoes, arrange in a baking dish.
- Place halloumi in the center, drizzle with olive oil and sprinkle with red pepper flakes.
- Bake at 200°C (400°F) for 25 min.
- Serve with basil.
