Ingredients

  • 1.5 lbs (680g) White fish fillets (sea bass or cod)
  • 1 large Tomato, sliced
  • 1 Green pepper, sliced
  • 1 Lemon, sliced
  • 3 tbsp Olive oil
  • 3 cloves Garlic
  • 2 Bay leaves
  • to taste Salt, pepper, parsley

Method

  1. Layer tomato and pepper slices in a wide pan.
  2. Place fish fillets on top. Season with salt and pepper.
  3. Top with lemon slices, garlic, and bay leaves.
  4. Drizzle olive oil and add 1/2 cup water.
  5. Cover and simmer for 15-20 minutes until fish flakes easily.
  6. Garnish with fresh parsley and serve with pan juices.
