Ingredients
- 1.5 lbs (680g) White fish fillets (sea bass or cod)
- 1 large Tomato, sliced
- 1 Green pepper, sliced
- 1 Lemon, sliced
- 3 tbsp Olive oil
- 3 cloves Garlic
- 2 Bay leaves
- to taste Salt, pepper, parsley
Method
- Layer tomato and pepper slices in a wide pan.
- Place fish fillets on top. Season with salt and pepper.
- Top with lemon slices, garlic, and bay leaves.
- Drizzle olive oil and add 1/2 cup water.
- Cover and simmer for 15-20 minutes until fish flakes easily.
- Garnish with fresh parsley and serve with pan juices.
