Ingredients

  • 2 tsp Instant coffee (Nescafé-style)
  • 1 tbsp Powdered allulose
  • 3 tbsp (45ml) Cold water
  • 1/2 cup (120ml) Unsweetened almond milk
  • 1 tbsp (15ml) Heavy cream
  • 1 cup Ice cubes

Method

  1. Combine the instant coffee, allulose, and cold water in a cocktail shaker (or a tall jar with a tight lid).
  2. Shake hard for 30-45 seconds until thick foam fills the shaker — this is the signature kafri (foam).
  3. Fill a tall glass with ice cubes.
  4. Pour the foamy coffee over the ice — the foam will rise to the top.
  5. Slowly pour the almond milk and heavy cream down the side of the glass so they sink under the foam. Serve with a straw, the way they do in Greece.
