The iconic Greek summer drink — instant coffee, allulose, and a splash of water shaken into a thick foam, then poured over ice with cold milk. Hand-shaker simple, pure foam on top.

Ingredients
- 2 tsp Instant coffee (Nescafé-style)
- 1 tbsp Powdered allulose
- 3 tbsp (45ml) Cold water
- 1/2 cup (120ml) Unsweetened almond milk
- 1 tbsp (15ml) Heavy cream
- 1 cup Ice cubes
Method
- Combine the instant coffee, allulose, and cold water in a cocktail shaker (or a tall jar with a tight lid).
- Shake hard for 30-45 seconds until thick foam fills the shaker — this is the signature kafri (foam).
- Fill a tall glass with ice cubes.
- Pour the foamy coffee over the ice — the foam will rise to the top.
- Slowly pour the almond milk and heavy cream down the side of the glass so they sink under the foam. Serve with a straw, the way they do in Greece.
