Ingredients

  • 24 Large mussels, cleaned
  • 1.5 cups Cauliflower rice
  • 1 large Onion, finely diced
  • 2 tbsp Pine nuts
  • 1 tbsp Currants (optional, small amount)
  • 3 tbsp Olive oil
  • 1/2 tsp each Allspice, cinnamon, black pepper
  • for serving Lemon wedges

Method

  1. Sauté onion in olive oil until golden. Add pine nuts and toast.
  2. Add cauliflower rice, spices, and currants. Cook 5 minutes. Cool.
  3. Pry open mussels slightly (keeping hinge intact). Stuff with filling.
  4. Pack stuffed mussels tightly in a pot. Add 1 cup water.
  5. Place a plate on top as weight. Cover and steam 20-25 minutes.
  6. Cool to room temperature.
  7. Serve with lemon wedges.
