Ingredients
- 24 Large mussels, cleaned
- 1.5 cups Cauliflower rice
- 1 large Onion, finely diced
- 2 tbsp Pine nuts
- 1 tbsp Currants (optional, small amount)
- 3 tbsp Olive oil
- 1/2 tsp each Allspice, cinnamon, black pepper
- for serving Lemon wedges
Method
- Sauté onion in olive oil until golden. Add pine nuts and toast.
- Add cauliflower rice, spices, and currants. Cook 5 minutes. Cool.
- Pry open mussels slightly (keeping hinge intact). Stuff with filling.
- Pack stuffed mussels tightly in a pot. Add 1 cup water.
- Place a plate on top as weight. Cover and steam 20-25 minutes.
- Cool to room temperature.
- Serve with lemon wedges.
