Ingredients
- 6 large Eggs
- 1 can (14 oz) Diced tomatoes
- 1 Red bell pepper, diced
- 1/2 medium Onion, diced
- 3 cloves Garlic, minced
- 1 tsp Cumin
- 1 tsp Paprika
- 2 tbsp Olive oil
- 1/4 cup Feta cheese, crumbled
- for garnish Fresh parsley
- to taste Salt and pepper
Method
- Sauté onion and pepper in olive oil 5 minutes.
- Add garlic, cumin, and paprika. Cook 1 minute.
- Add tomatoes, simmer 10 minutes until thick.
- Make wells, crack eggs into sauce. Cover and cook 5-7 minutes.
- Top with feta and parsley.
