Ingredients

  • 6 large Eggs
  • 1 can (14 oz) Diced tomatoes
  • 1 Red bell pepper, diced
  • 1/2 medium Onion, diced
  • 3 cloves Garlic, minced
  • 1 tsp Cumin
  • 1 tsp Paprika
  • 2 tbsp Olive oil
  • 1/4 cup Feta cheese, crumbled
  • for garnish Fresh parsley
  • to taste Salt and pepper

Method

  1. Sauté onion and pepper in olive oil 5 minutes.
  2. Add garlic, cumin, and paprika. Cook 1 minute.
  3. Add tomatoes, simmer 10 minutes until thick.
  4. Make wells, crack eggs into sauce. Cover and cook 5-7 minutes.
  5. Top with feta and parsley.
