Ingredients
- 4 (6 oz each) Cod fillets
- 1 cup Cherry tomatoes, halved
- 1/4 cup Kalamata olives, halved
- 2 tbsp Capers
- 2 tbsp Olive oil
- 1 Lemon, sliced
- 1 tbsp Fresh oregano
- to taste Salt and pepper
Method
- Preheat oven to 400°F (200°C).
- Place cod fillets on a baking sheet. Surround with tomatoes and olives.
- Sprinkle capers over everything, drizzle with olive oil.
- Top cod with lemon slices and oregano. Season with salt and pepper.
- Roast 18-20 minutes until cod flakes easily with a fork.
