Ingredients

  • 4 (6 oz each) Cod fillets
  • 1 cup Cherry tomatoes, halved
  • 1/4 cup Kalamata olives, halved
  • 2 tbsp Capers
  • 2 tbsp Olive oil
  • 1 Lemon, sliced
  • 1 tbsp Fresh oregano
  • to taste Salt and pepper

Method

  1. Preheat oven to 400°F (200°C).
  2. Place cod fillets on a baking sheet. Surround with tomatoes and olives.
  3. Sprinkle capers over everything, drizzle with olive oil.
  4. Top cod with lemon slices and oregano. Season with salt and pepper.
  5. Roast 18-20 minutes until cod flakes easily with a fork.
