Ingredients
- 4 (6 oz each) Cod fillets
- 1 can (14 oz) Diced tomatoes
- 1 Jalapeño, diced
- 3 cloves Garlic, minced
- 2 tbsp Lime juice
- 2 tbsp Olive oil
- 1 tsp Cumin
- 1/4 cup, chopped Fresh cilantro
- to taste Salt and pepper
Method
- Season cod with salt, pepper, and cumin.
- Sear in olive oil over high heat, 3 minutes per side. Remove and set aside.
- In the same pan, sauté garlic and jalapeño for 1 minute.
- Add tomatoes, lime juice, and simmer 5 minutes.
- Return cod to pan, spoon salsa over, and cook 2 more minutes. Top with cilantro.
