Ingredients

  • 4 (6 oz each) Cod fillets
  • 1 can (14 oz) Diced tomatoes
  • 1 Jalapeño, diced
  • 3 cloves Garlic, minced
  • 2 tbsp Lime juice
  • 2 tbsp Olive oil
  • 1 tsp Cumin
  • 1/4 cup, chopped Fresh cilantro
  • to taste Salt and pepper

Method

  1. Season cod with salt, pepper, and cumin.
  2. Sear in olive oil over high heat, 3 minutes per side. Remove and set aside.
  3. In the same pan, sauté garlic and jalapeño for 1 minute.
  4. Add tomatoes, lime juice, and simmer 5 minutes.
  5. Return cod to pan, spoon salsa over, and cook 2 more minutes. Top with cilantro.
