Ingredients

  • 50 g green lentils (small portion)
  • 200 g spinach
  • 1 small onion
  • 3 cloves garlic
  • 1 (juiced) lemon
  • 2 tbsp olive oil

Method

  1. Rinse the 50 g of green lentils under cold water, then place them in a small saucepan, cover with water, and simmer over medium heat for 25 minutes until just tender, then drain and set aside.
  2. Heat the 2 tbsp of olive oil in a wide pan over medium heat for about 2 minutes until shimmering.
  3. Add the 200 g of spinach to the pan in batches, stirring each addition until wilted, which should take approximately 5 minutes in total.
  4. Stir the drained green lentils into the wilted spinach, mixing well to combine, and cook together over low heat for a further 10 minutes to allow the flavors to meld.
  5. Squeeze the juice of 1 lemon over the lentil and spinach mixture, stir thoroughly, and season to taste before serving warm.
